Distillation is a method of separation of substances based on differences in their vapor pressures. (Wikipedia)

Distillation is typically associated with either alcohol production or impurity removal.

Coffee is not distilled. If you check the coffee FAQ you will see a fairly complete list of the common methods or making coffee.
