Storing brewed coffee

I am a over the road trucker. I roast and grind my own coffee at home. I usually am gone for a week at a time. I am wondering if there is a way to brew at home and take the brewed coffee with me and keep it fresh for a week. I have a microwave and refrigerator freezer in my truck.
